In drop cookies, the dough consistency remains workable during scooping and portioning. The flour absorbs moisture evenly, which makes predictable dough handling without excessive stickiness or dryness when standard ratios are followed. Although if a dough is sticky by nature, don’t forget you can always use some extra flour on your hands and on the workspace surface to make it easier to work with.

Beyond cookies themselves, this flour also performs well in crumble and crisp toppings, where it helps bind butter and sugar together to create a cohesive texture. I used Bob’s AP flour for an apple crumble and found the texture to be perfect in the sense that it helped bind the butter and sugar together to create crumbs but also did not take away from the delicate nature of a fruit crisp.

Cakes

In terms of cake baking applications, this flour helps create a tender, even crumb while providing enough sturdiness for layers, sheet cakes, and cupcakes to hold their shape. It produces cakes that are sturdy enough for slicing and frosting while maintaining a soft texture without feeling dense.

Layer Cakes, Sheet Cakes & Cupcakes

In layer cakes, this flour provides enough structure to support stacking and frosting without collapsing while still maintaining a soft, even crumb. The same balance works well in sheet cakes and cupcakes, where consistency and an even rise are important.

In sheet cake recipes, which are typically super tender and single-layer, the flour distributes evenly through the batter and supports a uniform rise across the pan. It maintains this reliability in batters that include higher moisture content from milk, oil or butter.

In cupcakes, which are usually made from the same batter as sheet cakes, it supports dome formation and even internal crumb development.

I always notice some all-purpose flours seem to perform beautifully in one application and fall short in another, but Bob’s AP flour produced reliable results whether I was baking a batch of chocolate chip cookies, banana bread, or simple vanilla cupcakes.

Whenever baking with this AP flour, I rarely felt the need to adjust recipes because of the flour. Not having to compensate for the flour leads to much more relaxed and enjoyable baking experiences as opposed to doing mental math and playing science experiment games when trying to work with other flours.
